Spring is our favourite time of year. The swallows have arrived from Africa, the Geese have departed and the Gorse Flowers are in now full bloom. The Wild Garlic blows gently in the Spring air casting its aroma along the country lanes. It is a time of renewal and to look forward to a summer of warmth and carefree days.
We use both gorse flowers and Wild Garlic leaves to make our very popular Spring jellies.
The Gorse is fabulous with a soft Scottish cheese and can be substituted for honey in many recipes. It also makes a lovely Salad Dressing to enhance your summer salads.
The Wild Garlic leaves have been dried in the hydrator to enhance the flavour and this jelly can be used to with a traditional pork pie or placed on a Cheese board. We also use it to jazz up a chicken breast or it makes a lovely glaze on a pork chop.
Coronavirus has come as a shock to the whole world but we have been able to adapt our business to give us much more of an on-line presence which was lacking before this crisis. We have found as the farmers markets are not available our customers are still purchasing from us online and also telling their neighbours to do the same.
