Goat Curry with Hot Banana Chutney
Ingredients
- 1kg (approx) goat meat
- 1 large onion, diced
- 1 large baking potato, diced
- 4 sticks of celery, sliced thinly
- Curry spices of your choice
- 1 can coconut milk
- Tbsp Ghee or rapeseed oil
- 1 jar of Perthshire Preserves Hot Banana Chutney
Roast the leg of goat, having purchased it from the The Goat Company, Morpeth, Northumberland, cooked to your liking.
Once cooled dice the meat.
Fry the spices in the oil, add the onion, celery and garlic, turn the heat down & sweat until the onions are soft. Add the potato, coconut milk and meat & simmer until the potato is cooked. Garnish with coriander and mint leaves.
Serve with basmati rice, naan bread and a generous helping of Hot Banana Chutney on the side.
