A winter warming steamed Pudding.
Ingredients. 150g Bread Crumbs, 25g Self Raising Flour, 120g Soft Brown Sugar, 8 Tbsp Perthshire Preserves 3 Fruit Marmalade, 3 Organic Eggs, 120g Butter, 1 Tsp Bicarbonate of Soda.
Method. Lightly Grease a 2lb Pudding Basin. Melt butter and marmalade on a low heat. Put all the dry ingredients into a bowl and mix then add the melted Butter and mix well again. Whisk your eggs into a soft foam and gently fold into mixture. Place mixture into your greased pudding bowl and steam for 2 hours. Ensure the pan does not boil dry.
Serve with clotted cream or creme Anglaise.
